Pino Cuttaia was born in Licata, Sicily, and moved as a child with his family to Turin in Northern Italy. There he studied and took an interest in cooking which led to work in various renowned restaurants (Il Sorriso in Soriso, Novara; Il Patio in Pollone, Biella), before his eventual return to his roots in Sicily. The skills and precision he learned in Northern Italy, coupled with the ingredients and recipes of his childhood, drove Chef Pino Cuttaia to return to Licata with the goal of reinventing the classic dishes of Sicilian cuisine. To make this dream come true, he opened La Madia restaurant in Licata, Sicily, with his wife Loredana in 2000. His passion for the cuisine of the region has regenerated these dishes, elevating them through the sophistication of his culinary talent while maintaining their true identity. Not only inspired by the fish, meat, fruit and vegetables of the region, Chef Cuttaia’s memories are the secret ingredient of all his creations as each bite tells a story. His family run restaurant, La Madia, has inspired a growth in tourism to the region, especially following the restaurant’s first Michelin star in 2006 and second in 2010. Both the restaurant and Chef Cuttaia have received prestigious awards and accolades from the most important international food guides, recognized for both the exceptional food and important contribution to preserving the region’s traditions and contributing to an innovative culinary future.
